Triple Lemon Chiffon Cake

Did you know that March 28th is National Lemon Day? This would be the perfect cake to celebrate the day with. The Cake Slice bakers voted to bake Triple Lemon Chiffon Cake from Sky High: Irresistible Triple Layer Cakes by Alisa Huntsman And Peter Wynne.

I cannot believe how easy this cake came together. The curd? Easy peasy. The cake? One, Two, three ...done. The whipped cream icing? Piece of cake.

The only modification I made to the recipe was to add a little agar-agar to the whipped cream. I don't know about you, but I am a slow at frosting cakes. The agar-agar would be the equivalent of adding a little gelatin the whipped cream. This is just my way of insuring that the whipped cream doesn't melt or slide off the cake before I can snap a photo.

GIGI!!!! That cake is amazing!!!! It reminds me of the music box I had as a little girl, that when I opened it the little dancer in the tutu would pop up and spin around to a charming little song... and then I'd keep opening and closing it trying to figure out how it folded in on itself! Haha! Great cake!!!

What a fun and beautiful looking cake Gigi! Thanks for the agar-agar hint. I've tried using gelatin in the past, but with mixed results...I'll definitely try this next time.

it is so cute--i am a sucker for twirling ballerinas! good tip about stablizing the whipped cream...it always gets overworked while frosting. PS: i got my pastel sprinkles at target right around easter a couple years ago...they are made by wilton.

I have been on a baking hiatus since Dec due to moving and being sick for a full month... but I want to get back on it, I might try to do this one this wkd even though it's a little late. Lemon anything sounds SO GOOD right now, esp since I have a new small Meyer Lemon tree!!!
