Pumpkin Pie Pancakes

OMG, where have I been for 21 days? I wish I could say that I had been somewhere exciting and done some insane thing. The reality is that regular old life had gotten in the way of things.

I had wanted to bake something inspired by the fall weather. I know it's fall because it's almost October, but you'd be wrong. Go ahead and take a look outside. It's been in the high 90's here in So. California.

Seriously. Somebody hand summer her "pink slip" because she has stayed well past her welcome.

I am ready for fall's cool mornings. Mornings filled with coffee and something sweet.

I have had muffins on the mind for awhile now. Ever since my friend Katie sent me a set of gorgeous muffin cases. I stare at them every night and say "...soon I will bake something delicious." So, I have been patiently awaiting the entry of fall.

I guess fall is going to be fashionably late here. Until fall makes his grand entrance I give you pumpkin pancakes. Yes, no oven required, yet packed full pumpkin pie taste.

BTW, what do you mean by a "pink slip" for summer? I'm not familiar with that phrase.

Give summer her pink slip! I love this season for food. I fell all inspired again. Just take thing one day at time amd treat yourself to some goodies like these on occasion.

Welcome back. Hope you're feeling refreshed (despite the heat). LOVE the pancakes - sadly, it's been fall here since the end of spring, and this week I found myself eyeing up my cans of pumpkin wondering what to do with them. I think I have an answer.

"pink slip" is an american term that refers to one being fired.

there's nothing weird about loving pumpkin pancakes, especially when they're saturated with syrup. and i do mean saturated. :)

These do look delicious! I LOVE pumpkin too (pumpkin bagel this morning) but can't get away with it for Sunday morning breakfast - it makes the bf sick! I'll have to save this recipe for sometime he's away. ;)

OK, I am going to have to try this recipe after my recent disaster with pancakes. and seriously, what is up with this weather! someone recently told me about the Santa Ana winds. i recently moved to the WC and this is a first for me. I long for a morning chill too!

The pancakes look awesome. I love the recipes and especially the pics you post! Definitely try pumpkin chocolate chip cookies if you haven't already. I'm really happy fall is finally here! The weather is still being a bit weird for us but the leaves are changing and it's beautiful. These pancakes look delicious! I love pumpkin anything.

Ohh I'm so in the mood for pancakes at the moment... sadly I've just moved into uni halls of residence and I can hear the cleaners in the kitchen right now, so I'd better wait a while. Looks like lunch!

We tried making waffles with the left over batter, but it didn't taste as pleasurable as it did in pancake form.
