Southern Coconut Cake

As you know, The Cake Slice bakers have been baking our way through Sky High: Irresistible Triple-Layer Cakes by Alisa Huntsman and Peter Wynne. This month the group voted for Southern Coconut Cake.

I just adore coconut cakes but I find that not to many people like coconut. I believe this cake would convert any non-coconut believers. The cake had a tight tender crumb with a coconut essence. And the icing?

Cream cheese icing is a favorite for many. I have to tell you that this version will be my "go to" icing from now on. I will use it on coconut, carrot, banana, and hummingbird bird cakes. The icing has the cream cheese flavor we all love but adding "meringue" lightens the icing to an indescribable level.

Unfortunately, I am unable to show you the layers because I sold the cake! I don't think the buyer would have been happy if I cut out a slice. If you would like to see more triple layer coconut cakes then head on over to The Cake Slice. You won't be disappointed. Until next time ...Happy baking!

Btw, I sold my 2nd and 3rd cakes too after the first tasting that is. Everyone was taken by its flavor. haha.

Man, this cake looks divine! I am a huge coconut fan, as well, and I only wish I could convert more people to the way of the coconut. I can't wait to try this frosting that everyone is raving about!

what's with those people who don't like coconut, anyway?? this such a delicious cake...and yours is so pretty, that i'm sure it was worth every cent to the buyer! the icing was divine--i'll make this one again, too!

A few questions: Well first, your cake looks GORGEOUS! Okay first question, is it possible to join the cake slice. Second, if #1 is possible, how often do you bake and is it mandatory (like those DB nazis... lol)?

I loved this cake. I like the flavor of coconut, just not the texture. Unless it's in an Almond Joy bar. :) Yours looks great!

Hi Gigi,
I made this cake today and taste of the cake and the frosting was wonderful. I just had a problem with the frosting it got broken.Where did I go wrong? what do you think. I followed every instruction.

That cake looks amazing! I've been looking for a good Coconut Cake recipe and I think this will be my next project. I also wanted to let you know that my very first layered cake I made(Chocolate Sour Cream Cake with Peanut Butter Frosting and Chocolate Peanut Buttler Glaze) came off the net from another blogger who got the recipe from Sky High Cakes and I have fallen in love with the book. If I didn't have to order it I would be baking with that book all the time! So, thank you for choosing that book, I'm a follower of yours now :) I've been thinking about selling cakes as well.....hope thats been going good for you!
