Toaster Oven Baking & A Meme

The other day I wanted coffee cake or a muffin for breakfast. But that would mean turning on the oven. Darn this heat. I went into the kitchen to grab a water and then it hit me! The toaster oven! Could it work?

I used a Bisquick recipe. You know the ones on the back of box. And you know what? It worked! Instead of the 20 minutes it took 45 minutes but the cake was baked perfectly and tender.

Due to the heat I may have to pass on 2-3 of the Daring Bakers challenges. It's too expensive to throw out ingredients that don't do well in high temperatures. Unless Southern California cools down to unheard of temperatures or I get central air conditioning (neither of which will happen any time soon) I may have to take a pause on baking. On the bright side, I have been researching dessert recipes that do not require the oven. I have amassed a nice collection of cool desserts.

And now for the meme. A while back Katie of Apple & Spice tagged me for a 30 question meme. So here it goes....

Oh the heat! It's no fun baking in the summer. Still, I love bisquick as a base for coffee cake. Cute meme.

Your coffee cake looks great!
And, hey! I like egg over medium too. I feel like most people don;t even know it exists. :)

I've baked in the steamer, the crockpot, the microwave, and on the grill, but I've haven't done the toaster oven yet. Glad to hear it works! Very cool!

Too bad I don't have a toaster oven...that would be much better than firing up the oven in yucky heat.
Chubby Hubby is one of my favorites as well...chocolate covered peanut butter filled pretzels in ice cream...what is not to love!

Baking and heat do not mix! Nice job using the toaster oven. That coffee cake sure looks good to me!

I love baking in the toaster oven! It heats up quickly and doesn't make things too hot in the kitchen. Good luck battling the weather- I hope you can make the DB challenges work!

I like your choice of properties. Chicagos weather is all over the place. A lot of storms. I hear on you baking and wasting expensive desserts.

This looks great! We just moved and I found my long lost toaster oven. It has been in a box in the garage while we rented. Hurray!
I may have to try baking in it. It's hot here in Texas!

Ohh, what would I give for a bit of your heat. And a bit of that cake. Anything, really. I'm awash with envy.

I love my toaster oven. I've baked cookies in it, but no cake yet. How do you survive in Southern CA w/o A/C? Maybe I'm spoiled, but I think I would melt.
