mmm, Zucchini cupcakes with cream cheese icing. You could have pretty much put anything in front of "...cream cheese icing" and I would still probably drool. I have been wanting to make these cupcakes for a long time. The recipe is from Garrett of the world famous blog VanillaGarlic. The Chubby Cheeks Girls (Michelle & Linda) also baked Garrett's cupcakes earlier this week but were unable to photograph them. They raved about them and that was it, I was going to bake zucchini cupcakes! The cupcakes were excellent, they were very reminiscent of a spice cake. I used a mini-cupcake pan instead of a reg. muffin pan. I also ended up sprinkling a little coconut on top, that I had leftover from another cupcake recipe. The mini zucchini cupcakes and I enjoyed the morning reading my criminal evidence book and sipping on espresso. Thanks for a great recipe Garrett!
P.S. Sorry for the glare on the photos, but you would not believe how hard it is to photograph white icing. I will definitely try to remedy this problem :)

YAY!! So glad you liked! Could u possibly post your experience (positive and negative) in the comments section of the recipe? :)
If not is cool.
Thanks again for trying them!!!
They look very yummy. There seems to have been a flood of zucchini cakes and cupcakes on blogs at the moment. I have never tried them before, they must be trying to tell me something :)
You read my mind! I'm thinking about making zucchini cupcakes tomorrow!
Garrett: the only negative experience was that I was not sure how long to leave them in since I made tiny cupcakes. These bad boys were DONE at ten minutes maybe eleven at the most. They were lighter than a muffin but still very much cake like.I also LOVED the currant addition to the recipe. Oh yeah, I didn't have turbinado sugar, I used brown sugar. It's well written recipe.
I will agree. Zucchini cupcakes are everywhere. And I am about to jump on the bandwagon this weekend. Your look gorgeous!
We just happen to be overrun with zucchini right about now... These look like a yummy solution.
if you have photoshop, you can use the shadow/highlight tool to reduce the highlights. that will take away some of the white glare you talked about.
PS: they look scrumptious! i love the way you arrange your photos.
Oh delicious looking cakes you have here!
You're cupcakes look beautiful, as always!!! You're super talented Gigi!!! I'm going to bake these again soon, I just hope my pictures look as beautiful as these!
