Classic Milk Chocolate Cupcakes

Wow! This is one of those go to recipes. As I handed out the cupcakes I noticed that everyone was licking off the icing first and then eating the cake. Yes, the icing is that good. Everyone commented on how they could eat the icing with a spoon and be utterly content. So, the next time you need a batch of cupcakes, remember that is your go to recipe and enjoy!

I filled the cupcakes 2/3 full (makes 24- 28 cupcakes) and baked for 20-25 minutes.

I was able to get 28 evenly flat cupcakes, but if you like your cupcakes with a round top then 24 is your magic number.

Those look really rich and indulgent. The cake is so dark it looks almost black. What cocoa powder do you use, or is the colour down to the added coffee in the cake mix? I want one!

For this particular cupcake I used Valrhona unsweetened cocoa.

Sher: I know, there was about a ramekin of icing left and I saved it. :) When I got off work I ate it ...okay I licked the ramekin too.

Sandi: it depends on what day of the week it is. If it falls on a school day, then friends from school eat the samples. If I have to go to work, then co-workers eat the samples. Sometimes I don't have enough "tasters", I really need to put a "help wanted" sign out :p

Okay so this is probably a stupid question but did you make the cupcake separately and only used the link for making the frosting to top off the cupcake? Or did you make the cupcake the way it was listed in the recipie (except instead of cake, you made cupcake). I am just curious. I am really trying to replicate http://www.gigiscupcakesusa.com/texasmilkchocolate (Gigi's Cupcakes- Texas Milk Chocolate) at home for my little sisters so any tips on how to would be great!
