With Valentine's Day right around the corner, I wanted to bake something non-chocolate just to break up the monotony of chocolate everywhere (..Sigh). What to bake?
That was the question, everyone I asked, screamed for chocolate. Finally, Lucy (my laundry partner) said "I've seen chai tea in everything lately, what about that?" (...Hmm?) I've never had chai tea. So, that's where I left it for 2 days.
Then onTuesday, I went to the bank which is conveniently located next to a Starbucks, and ordered a tall chai latte. It was okay, nothing to get excited about. I was still left with the question of what to bake. (looming over me like a dark cloud, similar to Jose Turner begging for pecan brownies) On my way to school on Wednesday, I stopped by The Coffee Bean to get a cup of coffee, but noticed that they too; have chai latte.
I said what the heck and ordered a chai latte. WOW! What a difference between the two chai lattes. The one from Coffee Bean was rich and velvety with a hint of vanilla, as opposed to Starbucks, which was slightly on the bitter side. All through class I was thinking, this is going to make a great cupcake! I as soon as the clock hit 10:10pm, I was out of there! (sorry, Prof. Heibler) How to add chai tea to cake batter?
I don't know, I googled and googled until 4:30am and finally gave up. I was just about to fall asleep, when it came to me! What is chai tea?(googled and found a ton of recipes) Chai tea (from what I was able to gather) is black tea, heavy milk, spices (cardamom, ginger, cloves, fennel, & cinnamon) and a sweetener. I wanted to achieve the same taste and velvety texture of the chai latte from The Coffee Bean. Off to the kitchen I went (at 6:am)! I went through my binders of recipes and found a very simple yellow cake recipe (which I wrote down years ago) and that was my base for the recipe. So, here it is Chai Latte Cupcakes with a White Chocolate & Cream Cheese Icing.

Chai tea is black tea and the spices the milk is just added. The spices are what make the chai. There are chai teas that use other types of teas as opposed to black as well.

I loved making my own baby food for my two. They ate it so much better
as well. Those canned ones nvariably have not as ripe vegetables in it, and it doesn't taste as good.
